Description:
This WebQuest is designed to assist students in a college level Management by Menu or Menu Planning course, ideally one that utilizes the text Management by Menu by Lendall H. Kotschevar and Diane Withrow.
This project should take about 1 week to complete and is deigned to help students connect together lectures on introductory menu planning, considerations and limitations, menu accuracy, menu mechanics, cost controls, menu pricing and menu production.
After the completion of this WebQuest, students should be able to:
* Explain how a menu functions as a planning tool, control tool, and a marketing tool.
* Describe the stages of menu development.
* Compare different menu styles.
* Define the meaning of demographics and psychographics and describe their importance in developing a menu.
* Describe and apply a variety of methods to price menu items.
* Explain the difference between costing and pricing.
* Discuss the importance of keeping accurate records.
* Write effective menu descriptions.
* Describe how computers are used to develop menu format and presentation.
* Explain the importance of menu presentation and format and demonstrate these skills in a project.
